i hate breakfast. or rather, i hate breakfasts that are mind-blowingly amazing and, often, calorie laden and fat-filled. i love my eggs, waffles, potatoes, breakfast meats. but, those things aren’t really ideal for those of us training for a 10k. on the other hand, fruit salad is none of those things, and still delicious. even more so when it involves things besides fruit.
we had a berry-cucumber-mint salad at our wedding two years ago. it was actually one of the few things that didn’t get eaten to the bottom of the bowl. i think people were unsure about the combination. frankly, i was. but, now i like the combination of fruits and vegetables in a salad. especially if it means adding cheese as well.
watermelon and feta breakfast salad
makes 2 servings
1/4 watermelon, sliced and cubed, seeds removed
1/4 cup feta cheese, crumbled
pepper and salt to taste
1 tsp balsamic vinegar
mix the first three ingredients. drizzle the vinegar over top. serve with toast.
