for a date.

we had folks over for new year’s. and, as is the usual procedure at our parties, we had way too much food. there were oreos (but not these, rather, these from a cookbook the manly man* gave me for christmas). there was fondue, veggies and dips, roasted stuffed peppers. there were other things too. but what stood out were the dates.

i thought i hated dates. i am completely wrong about this. i just can’t pop a whole date in my mouth at once it seems: they are two sweet and too dense for my tastes. however, when paired with something (bacon, cheese, almonds), then there is balance. and then, it is good.

goat cheese stuffed dates
makes two dozen dates

1 lb (2 dozen) medjool dates, pitted
100 g goat cheese, softened
1 tsp. freshly grated nutmeg
1/2 tsp. ground cinnamon
1 tbsp. honey

preheat the oven to 350F.
mix the goat cheese with the nutmeg, cinnamon and honey.
spoon about a teaspoon into each of the pitted dates. (if you have a piping bag and tip handy, you could also pipe the filling in)
place the dates on a baking sheet
bake for 7-10 minutes, until the cheese is softened.

*marysol christened my husband with this moniker in an email. i like it.
