do you remember me telling you a few weeks back about the amazing recipe i had for you guys? it involves mashed potatoes. i know most folks look at mashed potatoes and think, “what recipe? you have potatoes, and some liquid and a bit of butter and you mash them”. well, there’s that. and that serves its purpose. especially if the potatoes are a conduit for say, gravy.
but these ones stand on their own. i could, and did, eat them as a meal by themselves (actually, i ate the leftovers as a meal by themselves). the secret ingredient? apples.
i ran out of fingerlings last week and wasn’t sure i’d have enough for dinner, so i peeled an apple , chopped it and threw it in with the boiling potatoes. believe me: it tastes much better. better than i thought, yes. but also better than most mashed potatoes.
mashed potatoes with apple and rosemary
makes 4 servings
1/2 pound potatoes of your choice, chopped into medium chunks (1-2″ cubes)
2 medium apples, peeled and chopped into small chunks (1/2″ cubes)
1 sprig rosemary
bring the potatoes, apples and rosemary to a boil in a large saucepan, allow to cook until the apple is tender.
mash up with your choice of cream cheese, butter, milk and spices. in this case we used:
1 tbsp butter
1 tbsp cream cheese
1 tsp herbs de provence
salt and pepper to taste
