it was a dear friend’s going away party on saturday. she’s heading back to her home province to explore and to make money to pay off student debts. which sounds like not such a bad idea. but, we threw her a party. because we like her. and that, too, turned out to be not such a bad idea.
olive oil buttercream icing
adapted from martha
1 1/3 cups sugar
7 large egg whites
Pinch of salt
4 sticks unsalted butter, cut into tablespoon-size pieces, softened
1 tablespoon good quality olive oil
1 tsp vanilla
combine sugar, egg whites, and salt in the heatproof bowl of an electric mixer. or a double boiler.
set over a pan of simmering water.
whisk constantly until sugar has dissolved and mixture registers 160 degrees on an instant-read thermometer.
return bowl to mixer or pour mixture into your mixing bowl; fit mixer with whisk attachment.
beat on medium-high speed until stiff, glossy peaks form, and mixture is cool, about 10 minutes.
switch to paddle attachment. with mixer on medium-high speed, add butter, 1 or 2 tablespoons at a time, mixing well after each addition.
mix, scraping down sides of bowl as needed, until mixture is smooth.
add vanilla and olive oil and fold in until mixed.
it was enjoyed by all, but i think especially by our hosts. we left them with about half of it, given that it was three layers tall, and we gorged on BBQ beforehand.
also, you can put icing on the outside edge. i thought it looked nice like this.
