tequila - white chocolate cookies

the party, a friend’s double-sweet-sixteen, involved a good amount of drinking. i figured that these cookies would be the perfect companion. they don’t actually have booze in them, so they are child-friendly

white chocolate – tequila shot cookies.
makes 18 cookies

1 cup unsalted butter
1 1/2 cup brown sugar
2 large eggs
1 tsp vanilla
2 1/2 cups pastry flour
1 tsp baking soda
1/2 tsp salt
1 cup white chocolate chips
the zest of 1 lime
the juice of 1 lime
sea salt

preheat oven to 375.
mix the butter until smooth and slowly add the brown sugar. add the eggs and mix until creamy and lump-free. scrape down the bowl throughout, lest you have chunks of butter and brown sugar when you’re done. add the vanilla, zest and lime juice and stir.

mix together the baking soda, flour, 1/2 tsp salt and chocolate chips. (i find coating the chocolate chips in the flour makes for better cookies, like mixing flour and fruit for muffins). stir in the dry ingredients with the wet.

allow the mixture to sit in the fridge for 30 minutes. drop the cookies in tablespoon size balls on to a buttered/covered/sprayed/floured/non-stick pan. top with a sprinkle of sea salt on each cookie and bake for 10-12 minutes.
