quickly now, because i have at least ten things on the go.

this icing was super quick, easy, and yummy! i can’t wait to share with the capital cupcake camp planning team tomorrow!!

chocolate cream cheese frosting
makes enough for a dozen cupcakes

1/2 cup cream cheese
2 tbsp corn syrup or golden syrup
1/2 tsp vanilla

whisk these three ingredients together

4 ounces semi-sweet chocolate, either chips or grated.

heat the chocolate in a double-boiler over simmering water, or in a metal bowl that fits over a pot of water nicely.
once the chocolate has melted, combined with the cream cheese mixture, and continue to whisk until smooth. don’t worry if it doesn’t look like icing. you should set it in the fridge for not more than a half hour before it’s set.
