caesar salad is undoubtedly the one salad that i can get a good friend of mine to eat. he is pretty much a carbivore; he doesn’t like vegetables.
i made this for a party last night and it was a huge hit. pity that the unbirthday girl didn’t get to try some…
- 1 head romaine
- 50g gran padano or parmesean reggiano cheese, grated
- 150g pancetta, or your favourite bacon, chopped
- 2 shallots, sliced orfrenched
- a dozen or so sundried tomatoes, sliced in half
- 1 tbsp olive oil
- juice of one lemon
- zest of half lemon
- 3-4 cloves garlic
- sea salt to taste
- 1 tbsp gran padano or parmesean reggiano cheese, grated
This is pretty simple stuff. Cook the bacon on a medium heat until crispy. Reserve the grease, and cook your onions, on medium, until nicely browned. Heat the oven to 350*F Place the onions in a pan, along with the garlic cloves. Cook the garlic and the onion (this will allow the onion to dry out a bit more) for 15 minutes.
For the dressing, mash the garlic cloves and cheese with the oil. Add the lemon juice and zest, and salt to taste.
This is more about the ingredients, and less about the technique. From here on out, it’s a matter of putting together a salad as you normally would.
